When speaking with clients about the hardest part of adopting a healthy lifestyle, they’ll often say how hard it is to give up bread. Bread, bread, bread: It’s a staple of the Standard American (/Australian/ English/ Almost Everywhere) diet, and it’s hard to imagine what lunch or breakfast can look like when you remove the crusty loaf from your diet. Enter sweet potato toast (i.e. toasted slices of, yep, sweet potato). This is a #trending food, one currently burning up Instagram, and for good reason: It’s quick, versatile and downright delicious. It can be eaten topped with your favorite spreads, like a cracker. It can act as the perfect base for your poached eggs. It can even stand in for those hamburger buns!
Here, three of our favorite ways to eat sweet potato toast.
SWEET POTATO TOAST
- One medium sized sweet potato
- Chop your sweet potato into 3-centimeter thick rounds
- Place in toaster and cook until soft (around 5 minutes)
- Add your spreads and marvel in the deliciousness of it all
…AND THE SPREADS
Avocado Avocado and sweet potato are a match made in heaven. The healthy fats combined with the starches keep you full, and regulate your blood sugar. Mash half an avocado with a teaspoon of fresh lime juice. Spread on top of toasted sweet potato, add a sprinkle of salt and enjoy.
PB&J Think peanut butter and jelly sandwiches are a thing of the past? Think again. This grown up version is even more delicious than your childhood creation, but just as satisfying. Add a generous amount of peanut butter to the top of a toasted sweet potato. Top with a thin coat of jam. Pro tip: This one is also delicious with almond butter
Tahini & Strawberries Are you also a giant fan of Tahini? If you’re not, your about to be. This unlikely duo make the perfect pair when combine with sweet potato. Place two thinly sliced strawberries on top of a toasted sweet potato, and top with tahini.
